Golden Rules of F&B Service

The 10 Golden Rules of F&B Service

1. Serve from the Left, Clear from the Right

This is the most important rule in fine dining.
Always serve food and drinks from the guest's left side.
Always clear plates and glasses from the right side.
Why? So you don't disturb the guest with your dominant hand.

2. Ladies First

Always serve ladies first, then the host, then other male guests.
Start serving from the guest sitting to the host's right and go clockwise.

3. Never Touch the Rim of Glasses or Plates

It looks unprofessional and unhygienic.
Hold glasses by the stem or base.
Hold plates from the bottom edge.

4. Always Smile and Make Eye Contact

Your face is the first thing a guest sees.
Greet with "Good Morning/Evening Sir/Ma'am" and a genuine smile.
Eye contact shows confidence and respect.

5. Stand Straight, Walk Silently
No slouching. No running. No loud talking in the restaurant.
Walk from behind the guest's chair. Never walk between two
guests who are talking.

6. Anticipate Guest Needs
Don't wait for the guest to ask. Be proactive. See an empty water
 glass? Refill it.
See a dirty ashtray? Change it. Good service means thinking one step ahead.

7. Never Lean on the Sideboard or Put Your Hands Inside Your Pockets
It makes you look lazy and unprofessional.
Always stand in a proper position when you are not serving.

8. Know Your Menu 100%
If a guest asks "Is this spicy?" and you say "I don't know", you
will lose trust from your guest.
You must know the ingredients, cooking methods, and what kind of wine goes with which type of food.

9. Handle Complaints Calmly - L-E-A-R-N
L—Listen. | E—Empathize. | A—Apologize. | R—Resolve. | N--Notify your Manager.
Never argue with a guest. The guest is always right.

10. Teamwork and Discipline
F&B is a team game. Help your colleagues.
Come on time. Keep your uniform neat and clean.
Your tidiness is part of the service.

Final Tip for Students
Don't try to remember all 10 rules at once.
Start with Rule 1, 2 and 3. Master them.
Then add the next 3. Within 1 month, all 10 will be in your habit.
